Our Favorite Summer Cake Recipe
Summertime gets the ECG craving strawberries, blender drinks, and greek salad...but not necessarily cake. Let's face it, most cake flavors are not exactly pool-side fare despite the majority of cake-worthy celebrations landing smack-dab in the middle of the hottest time of year.
That's why, when she saw this adorable Watermelon-theme cake (with complete tutorial, btw) on the Cakeheads web site, she decided to share one of her most popular summer cake recipes.
Pink Lemonade Cake
No, it isn't a watermelon flavored cake, but it is perfectly summery, and it goes perfectly with a Watermelon Mojito. The recipe below makes 4-7" to 8" round cakes. The ECG uses her favorite Cake Leveling Ring to split the tiers in half horizontally for more mousse and strawberry filling, so unless you want a super tall (8 layers after splitting), halve the recipe!
